I can’t remember where I found this, but it has become my favorite fresh salsa recipe.
Difficulty: Easy
Servings: 4 (about 2 cups of salsa)
Prep Time: 10 - 15 minutes Cook Time: n/aIngredients
1/2 small onion, minced
1 jalapeno, seeded and minced
2 medium tomatoes, diced
3 Tbsp cilantro, finely chopped
juice of 1 lime
salt – 1/4 to 1/2 tsp to taste
Directions
Mince the onion – you can use the food processor for this recipe; that makes it very easy – and then rinse in cold water. (This takes the sharpness off. You can skip the rinsing but it’s not as good.)
Mix all ingredients except salt together, taste for salt and add as required, and voila!
It will keep, covered and refrigerated, for 4 to 5 days.
Mine never lasts that long.
