My husband loves dumplings and I usually use the recipe off the back of the box of Bisquick. But there must be something better than that. Does anyone have a good dumpling recipe they’re willing to share?

    It just so happens that I dug out my favorite dumpling, noodle, and pierogi dough recipe this morning.

    2-1/4 C flour
    1/2 tsp salt
    1 egg
    2 Tbsp butter, melted
    3 heaping Tbsp sour cream
    1/8 – 1/4 C warm water

    Mix it all together and knead on floured surface until smooth.
    Chill overnight or for at least 2 hours before rolling out.

    Mrs. Turkey, until 6 or so years ago I thought that a dumpling was exactly what you are talking about – those were the only dumplings that I had ever eaten or known of. Then a coworker brought in and shared with me dumplings that his wife had made. Tomato dumplings (cooked in stewed tomatoes) and butter dumplings (sweet – cooked in a sugar/butter syrup). OMG! And these were rolled dumplings! Where had they been all of my life LOL? Staci’s recipe looks really good. I don’t know that it would work as a drop dumpling.

    No Ma’am, those are rolled dumplings but they are worth it. For quick dumplings you can pinch or cut off pieces of whomp (canned) biscuits into boiling water – they make fairly good drop dumplings depending on what brand/flavor you use.

    I have a standard recipe for drop dumplings:

    1-1/2 C flour
    1 egg
    1/2 – 3/4 c water
    salt – to taste

    Mix and drop from spoon.

      Staci…yes that is what I was seeking…”a drop dumpling”. A mixture to drop into hot broth,soup, stews. Guess I don’t know my dumplings very well ha ha. I should have explained myself more clearly. Thanks for recipes!

      Dede…your dumplings sound good also…like you I hadn’t heard of any other kind other than the dropped in hot broth of some kind and an apple dumpling. Can learn a lot from this site…amazing!

    I am no dumpling expert, but I do know that good drop dumplings come from putting the lid on right after dropping the dough in the pot and NOT peeking for about 10 minutes. The steaming is the magic 🙂 And as David says on Canning2 – together we are all smarter than any one of us alone LOL.
    Try Staci’s rolled dumplings simmered in a pot of stewed tomatoes (with plenty of juice and a bit of sugar). Terrific comfort food.

    What kind of dumplings do you like, more of a noodle type dumpling or bread dumpling. I’m not a huge fan of the light and bready type dumplings.

    Oh Dede, I make a ham or bacon gravy that I usually serve over rice or mashed potatoes that I think dumplings would be perfect in – thanks for the idea.

    Fluffy Bisquick dumpling are my favorite, especially if they thicken up the soup a little…yum.

    My grandmother made a firmer type drop dumpling called klimps. She and my mom loved them, I wasn’t crazy about them.

    She didn’t have a written recipe she just mixed them up out of her head, but these look the same:

    Yes Ma’am.

    That recipe is a fresh noodle recipe, it cannot be frozen, dried, or even kept for long periods in the refrigerator.

    It is a very tasty recipe. I often make the finger noodles to make chicken and noodles.

    I just watched Good Eats on the Food Network with Alton Brown and he did a show on dumplings. Where they come from and different types. You can get his recipes on Foodnetwork.com. Was interesting where the different types originated. Recipes are also available there just go to Alton Brown. Just a thought.
