This is a great side dish salad. It is my comfort food -my mother used to make it. I always have a bowl of cucumbers and onions in the refrigerator. When I am in a “snacking” mood, I pull the bowl out and eat a few. It takes care of my spicy, salty, and sweet cravings!!

Thinly sliced cucumbers
Thinly sliced green onions or leeks or scallions
Garlic
Rice vinegar
Water
Sugar
Spices
Dill
Parsley
Celery seed
Lemon pepper
Salt
Directions
Slice cucumbers and onions (or leeks, or scallions – your choice) as thin as possible into bowl. Add garlic (amount depending on how much you like) and spices. The ones I listed are the ones I like, you might have different preferences. Cover with 2/3 rice vinegar and 1/3 water (again, if you like it tangy – add more vinegar, if not, add less). Sweeten with a small amount of sugar. Let sit for a few hours in refrigerator. Enjoy!
