Prep Time: 30 minutesIngredients
3 English cucumbers
8 Roma tomatoes
1/2 – 3/4 cup lemon juice (just shy of covering ingredients)
1 1/2 tsp garlic powder or granules
1+ Tbsp onion powder
1 1/2 cups crumbled Feta cheese
1 tsp salt
1/2 tsp black pepper
1 pint or 12 oz can tomato juice
1/4 cup olive oil
Directions
Wash produce. Peel cucumbers. Dice and more small dicing of cucumbers and Roma tomatoes. Put into a large bowl together and mix. Pour lemon juice on and then add in the onion and garlic powders. A pinch of salt and black pepper are then added. Finally, pour one 12 oz can of tomato juice in and mix very thoroughly. Add the very crumbled Feta cheese and the olive oil, mix, and let set about 30 min. Stir again and serve. Adjust seasoning — I like it heavy on the garlic and a healthy amount of onion powder. The Feta acts as a thickener with the juices.

It is addicting, Dede. I’ve even had one young man heat his up and eat it and loved it. Adding black olives is also an option as are about a million variations any mind can come up with. I like it just like this and feast on it for days… 😉
