When my daughter comes home from college, she always asks for this or overnight crock pot oatmeal, which wakes the house with a nice smell.

Prep Time: 10 min Cook Time: 3 hrs while sleepingIngredients
lots of eggs with a tad of milk
shredded cheese, any will do
chopped veggies to your liking
ham and or breakfast sausage
salt and pepper
Directions
Spray crock pot good. Chop veggies. I like onions, green pepper, red pepper, yellow pepper, and squash. Mix all with some ham or breakfast sausage. i use my homemade turkey breakfast sausage. Layer 1/3 of veggies then salt and pepper and cheese. Repeat but just before adding last layer of cheese, scramble enough eggs with a tad of milk to just come to the top of the veggies. Let it settle a little to be sure the pot is full of eggs then add the last of the cheese. Plug this into a timer. Set it to come on at 3 am and off at 6 am. I dont worry about it going bad because it all comes out of the fridge cold. My hubby eats this at 6:30 am before work. We have also had it for lunch and dinner. I use a 2-3 quart crock pot and fill 2/3 full. Adjust for your size.

This is very good. I used a crock pot liner and sprayed lightly and it still wanted to stick. For just that little sticky the flavor made up for it by far. I added mushrooms,no onions. Very Denver omelet tasting. I will make this again.
