One of my favorites since I was a kid. Adding more butter, flour and milk can easily stretch this to feed more. You can skip the step of soaking the beef but it does lessen the sodium content. AKA Chip Beef Gravy AKA S.O.S. lol!
Difficulty: Easy
Servings: 4
Ingredients
3 ounce package of dried beef slices
4 Tbsp. Butter or margarine
4 Tbsp. flour
2 cups milk
Worcestershire sauce
white pepper
Toast or biscuits
Directions
Pour hot water over dried beef. Let stand about 3 minutes then drain well. Melt margarine or butter in a skillet over low heat. Tear or cut beef slices into shreds and add to the melted butter – stir to coat. Add flour to the pan a little at a time, stirring. Cook one to two minutes, stirring often. Add the milk about 1/2 cup at a time – mix well each time. Cook mixture over medium heat stirring constantly until sauce becomes thickened and creamy. Bring to a boil and boil one minute (can add more milk or water if needed). Season with a few splashes of Worcestershire and white pepper. Serve over toast or biscuits.
