A recipe from a great friend, Linda Stacey. Great for gift giving, family night and holidays. The honey roasted nuts really top this recipe.
Difficulty: Easy
Servings: 8
Prep Time: 5 Cook Time: 1 hourIngredients
8 cups popped popcorn, old maids removed
3/4 cup brown sugar
6 tbsp butter
1/4 tsp baking soda
1/4 tsp vanilla
3 tbsp light corn syrup
peanuts – amount you would like (honey roasted are excellent)
Directions
Pop popcorn (can use unsalted/buttered microwave). Put brown sugar, butter, corn syrup and salt into saucepan. Cook and stir on medium heat until butter melts and everything is mixed. When mixture boils, stop stirring. Cook 5 minutes without stirring. Remove from heat. Stir in thoroughly baking soda and vanilla. Pour over popcorn. Add peanuts. Stir well until all-popcorn is covered.
Put pan into oven on 300. Bake 15 minutes. Stir. Bake 5-10 minutes longer. Remove from pan and let cool. Easily doubles.

“old maids removed”…haha! Haven’t heard this term for the unpopped since childhood.
