A yummy casserole for kids of all ages. Great with a creamy coleslaw on the side.

Prep Time: 15 minutes Cook Time: 25-30 minutesIngredients
2 cans (15 oz each) chili with beans
6-8 hot dogs, sliced in half lengthwise
1 cup self-rising cornmeal mix (if you can’t find it,use 1 cup regular cornmeal mixed with 1 tsp baking powder)
1/2 cup milk
1 large egg
2 Tabs vegetable oil
1 cup shredded sharp cheddar cheese
Directions
Preheat oven to 400 degrees.
Pour the chili into an 11″x7″ (2 quart) baking dish. Arrange the hot dogs on top of the chili.
Whisk together the cornmeal mix, milk, egg and oil in a small bowl and pour evenly over the hot dogs.
Sprinkle the cheddar cheese on top.
Bake until the corn bread topping is lightly browned and firm and the chili bubbles around the edges, about 25-30 minutes. Remove from oven, let cool 5 minutes before serving.
