A very easy and crowd pleasing dish. Also good as a relish with pork.

Servings: Makes approx. 3 cups
Ingredients
2 cans black-eyed peas, drained well
1 tomato, peeled and chopped
1 bell pepper, diced
1 jalapeno, minced (or to taste)
1 red onion, chopped or diced
2 Tbsp. balsamic vinegar
1/2 bunch cilantro, minced
2 cloves garlic, minced
1/4 cup ketchup
salt and pepper to taste
Directions
Mix all ingredients and chill overnight. Serve with corn scoops.
