Bean Sandwiches

My Dad always talks about the bean sandwiches his grandfather made. From what I gather, the beans were in a loaf form. Then they’d slice it and serve on bread. Dad says that when it was cut, you could see the whole beans so they weren’t mashed before shaping the loaf. I haven’t been able to find ANYTHING like this on-line, but I’d love to be able to surprise him with a bean sandwich! (He doesn’t even know what kind of beans were used!)

    We made sandwiches from cold baked beans but they were mashed and rather of the texture of a chunky peanut buter sandwich but savory.

    Does he remember what color the beans were? That could be a clue. I was thinking maybe something similar to a bean burger recipe, but put in a loaf pan, put that in a larger pan and fill the outside one with water so it wouldn’t burn the beans. Then you could slice that up almost like a meatloaf.

    I bet with a little digging (asking him what kind of flavors, etc) you could come up with something delicious.

    Where did he grow up? I have a friend and coworker in his 70’s that grew up in a WV coal camp. He shares bean cakes with me when he can get his wife to make them. Cooked and seasoned pintos – cold leftovers made into fried ‘cakes’ like you make potato cakes from leftover mashed potatoes. SO GOOD! His family had over a dozen kids and he said ‘portable’ food probably saved his mother’s sanity LOL – hand a kid a bean cake and shoo em out the door.
    I bet those sandwiches are simply pintos cooked until very thick and the leftovers dumped in a greased loaf pan and chilled. Unmold the next day and slice. I think there would need to be little or no liquid left in the beans for this to work best.

    He actually grew up in a very small town in New York north of Hudson. Would you add any seasonings to the pintos? I make baked beans from scratch and that’s about it!

    Hi, I just done a search and put in bean loaf sandwich and there were quite a few recipes for making a bean loaf, maybe one of these would be the one you’re looking for.

    Beans here would have been and still are usually seasoned by a smoked ham hock or a piece of ham or fatback thrown in the pot. Maybe a little onion. Pretty simple. A smoked turkey leg makes them tasty too.
