Like banana bread in a cookie, more cake-like than cookie!
Difficulty: Easy
Servings: 3 1/2 doz cookies
Cook Time: ~15 minIngredients
1 1/2 cups sifted all purpose flour (I just whisk mine)
1 cup sugar
1 teaspoon salt
1/4 teaspoon nutmeg
3/4 teaspoon cinnamon
3/4 cup shortening (or butter)
1 egg, well beaten
1 cup mashed bananas (2-3)
1 3/4 cups dry oatmeal, old fashioned, not quick-cook
1/2 cup chopped nuts
Directions
Whisk dry ingredients together. Cut in shortening or butter. Add remaining ingredients and stir until blended. Drop by teaspoonful about 1 1/2 inches apart on ungreased cookie sheets (I used parchment on mine).
Bake 400° for about 15 minutes until edges are slightly browned (watch the oven. Mine started burning on the bottom before the tops were done, even in a convection oven). Remove to rack to cool.

I made these, and they turned out really yummy! I took heed of the warning that the bottoms burned before the tops were done, so I moved the cookies to the very top rack and reduced the temp to 350 and they turned out fine!
I also didn’t have any nutmeg at home, so I used some allspice and cloves. I’ll have to try these again when I have all the right ingredients!

When I click on “print this recipe”, all that comes up is the directions. I don’t get the ingredients. I tried this with a few different recipes and always got the same thing. Is something wrong with FB? Hope not!
I use FB a lot and have a couple binders full of the printed recipes, and would like to have more if it will work right. Hopefully someone can fix this. Thanks.
