An apricot jelly recipe I came up with myself to make use of all that juice from my steam juicer!
Difficulty: Easy
Servings: 5 pints or 10 half-pints
Prep Time: 30 minutes Cook Time: 10 minutesIngredients
7 cups apricot juice (unsweetened)
1/4 cup lemon juice
1 package fruit pectin
9 cups sugar
Directions
Combine apricot juice, lemon juice, and pectin in a large pot. (Add a teaspoon of butter to prevent foaming.) Bring to a boil over high heat. Add sugar, stirring until dissolved. Bring to a rolling boil; boil hard one minute, stirring constantly.
Remove from heat. Skim foam, if any. Ladle hot jelly into hot jars. Adjust lids and rings. BWB 10 minutes.
