This cake has lentils in it, but you cannot taste them. Good as is, doesn’t need frosting.

3 large eggs
2 c. cooked lentils, brown or green
1/4 c.canola or vegetable oil
1 and 1/2 c. sugar
1 tsp. vanilla
2 c. unbleached flour
2 tsp. baking soda
1 and 1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. cloves
2 c. chopped apples, cored but not peeled
1/2 c. chopped walnuts
Directions
Preheat oven to 350. Grease and flour a 9×13 pan.
In blender: eggs, cooked lentils; whiz until smooth; put into a mixing bowl. Add oil, sugar, and vanilla; stir thoroughly. Add flour, baking soda, cinnamon, nutmeg, cloves, chopped apples,and nuts.
Scrape into prepared pan, smooth top. Bake for about 35 to 40 minutes.
