A delicious jelly that works for either apple blossoms or crab-apple blossoms.
Difficulty: Easy
Servings: 5 half pint jars
Ingredients
2 cups Apple Blossoms (Crab-apples work too)
2 Cups Boiling Water
1/4c lemon juice
4 cups sugar
1 3oz pouch liquid pectin
Directions
Pick 2 cups apple blossoms. Make sure to get the blossoms only as the green can make it bitter. Once you have your 2 cups of blossoms pour 2 cups of boiling water over them. Leave to sit over night. I use a quart sized mason jar.
Strain your “Apple Blossom Tea”. I use a milk filter to get out any small bits. Make sure you have 2 cups of your apple blossom tea. If you need to, add some water. No more than 1/2 cup. Add to a saucepan, along with 1/4 c lemon juice and 4 cups of sugar. Heat until the mixture reaches a rolling boil. Make sure you stir it so it doesn’t scorch. When a rolling boil is reached, add your 3oz pouch of liquid pectin. Let it come up to a rolling boil again and boil for 1 minute. Remove from heat, skim off any foam and fill your prepared jars. Process in water bath for 5 minutes.
