This is my kids’ favorite dinner. It is simple, not too expensive to make, and tastes wonderful!
Difficulty: Easy
Servings: 9x13 pan
Prep Time: 20 minutes Cook Time: 30 minutesIngredients
2 pounds lean ground beef, cooked as desired (with onions and garlic or plain) and well drained
2 cans cream of mushroom soup (or one pint homemade)
2-3 cups cooked corn niblets
6 – 8 servings of prepared mashed potatoes (any kind or flavor works)
2 cups shredded cheese of choice (we like Cheddar or Cheddar-Jack)
Directions
Combine in a bowl drained, cooked hamburger and cream of mushroom soup. Stir in corn and a handful of the cheese. Pour into the bottom of the 9X13 pan.
Spread mashed potatoes over the top. Sprinkle with remaining cheese.
Bake in 350 degree oven, until cheese has melted and casserole is hot throughout. (Usually a half hour for me, if I have pre-warmed the oven!)
Let sit for about 10 minutes. Cut into squares and serve. Great with salad!
