My kids love this dish! We often add in cooked chicken, cooked broccoli, bean sprouts and almost any other veggie.

Servings: 4-6
Prep Time: 15-30 mins Cook Time: 5-8 minsIngredients
4 C cooked angle hair pasta
1 C sliced scallions
1 C thinly sliced cabbage
1/2 C thinly sliced carrots
(I used bagged coleslaw mix for instead of just the cabbage and carrots)
Sauce:
1/4 C natural peanut butter
1/4 C cider vinegar
1/2 C soy sauce (low salt soy sauce will work)
1 Tbsp honey
1 Tbsp toasted sesame oil
1 clove garlic – chopped
1/4 – 1/2 C canola oil
Directions
With a stick blender in a large bowl combine peanut butter, vinegar, soy sauce, honey, garlic and sesame oil until well blended. Slowly blend in the canola oil. The sauce should be slightly thickened and completely emulsified. It may only take 1/4 C of the oil to do this or it could take the whole 1/2 C.
Cook and drain the pasta, toss the pasta and veggies in the sauce.
