A very yummy blueberry muffin!
Difficulty: Easy
Cook Time: 20-25 minIngredients
3 cups all purpose white flour (I use 1 cup whole wheat + 2 cups AP)
1 tsp baking soda
2 tsp baking powder
1 pinch salt
1 dash nutmeg
1 cup sugar
1/2 cup vegetable oil
1 whole egg
1 cup plain or vanilla flavored yogurt
2 cups blueberries, fresh or frozen
1 Tbsp vanilla
1 tsp cinnamon
Directions
Preheat oven to 350.
In a large bowl sift flour, baking soda, nutmeg, baking powder, and salt. Set aside.
In another large bowl, whisk together sugar, oil, vanilla, egg and yogurt. Add dry ingredients and stir to a count of 10.
Add blueberries, reserving half a cup, and stir.
Add the mixture to the well buttered muffin pans. Sprinkle remaining berries on top and press down lightly. Sprinkle with course sugar.
Bake for 20-25 minutes.
