My ex-wife’s chili recipe. It is a favorite. You can serve it with some warm bread and butter and it takes the chill out of winter. You can double this recipe.

1 onion sliced
1 pepper chopped
1 clove garlic chopped
10 mushrooms sliced
1 lb ground beef
1 can (28 oz) diced tomatoes
1 can (8 oz) tomato paste
4 T chili powder
1 T hot pepper sauce (to taste)
1 can (28 oz) kidney beans drained
1 T oil
Directions
Put oil in a large skillet and cook onion, mushrooms, pepper, and garlic until onion is translucent. Add ground beef and cook until beef is no longer pink. In a large pot, pour the tomatoes (juice and all), tomato paste, kidney beans, chili powder. Stir together on medium heat for 5 minutes. Add beef mixture and stir well. Simmer for 1 hour stirring occasionally. Check that chili does not get too thick. Add water to thin. Add hot pepper sauce to taste. Serve.
