Guatemala style re-fried beans. Serving size is equal to almost 4 cans of refried beans.
Difficulty: Easy
Servings: 4
Prep Time: 15 minutes Cook Time: 8 hoursIngredients
2 cups dry black beans
5 cups water
1/2 cup chopped onion
2 garlic cloves
2 teaspoons of chicken bouillon
(this is not a cube – it is a smooth paste – I found it at the Whole Food store – the name brand I bought was “Better Than Bouillon”.)
1 teaspoon of salt
1 bay leaf
Directions
Put all ingredients into your crock pot. Cook on low overnight (8 hours or until the beans are done). In the morning, remove bay leaf. Pour everything else into your blender. Liquefy. Melt 1 Tablespoon of left over bacon fat in a cast iron skillet. Pour 1/3 of your liquefied beans into the skillet and fry until about the consistency of ketchup. The re-fried beans will start to set up more when they begin to cool (like gravy). You can use these in any recipe that calls for re-fried beans or eat it just like it is. They are SUPER yummy!!!
