This hot salad was served at a meeting I attended and it was wiped out quickly by those attending. The hostess used red potatoes with the skin on and she said that Yukon Gold potatoes were another favorite for this. Thanks to Betsy T. for serving and sharing this recipe.

Servings: 6 to 10 depending on serving size
Cook Time: 45 to 60 minutesIngredients
6 large potatoes, washed (peeling is optional)
1/2 cup mayonnaise
1 small onion, finely chopped
1 1/2 cups grated cheddar cheese
4 strips of bacon, cooked until crisp and crumbled
Directions
Boil potatoes until done, cool slightly, then dice.
In large bowl, combine all ingredients except bacon.
Pour potato mixture into a 9 X 13 baking pan.
Sprinkle bacon over the top.
Bake at 350 degrees for 45 to 60 minutes until hot and cheese is melted.
Serve immediately.
