HELP HELP HELP I have been searching everywhere! Years ago, I made some corn for the freezer and it went like this — blanch corn, cool, cut it off and now here is where I don’t exactly remember. But I know I added the corn to a large roaster added butter, cream or 1/2 & 1/2, salt, sugar and pepper. Does anyone have a recipe similar to this? If so, I sure do need it! I am blanching corn as we speak. I know this is an old fashioned recipe, but I remember it was also so wonderful. Actually my grandma used to do this, but I do not have the amounts of what to add. Hopefully this really neat website can help! I love it here!

Hi Barby! AACCKK!! Hope it isn’t too late!!! I did some quick googling for you, came up with this sweet corn site http://www.voltztreefarm.com/sweetcornrecipes.htm. There was a couple recipes in there that had butter etc added to a roasting pan, then frozen.
Hopefully, you can come up with that recipe you’re really looking for! If so, please share with the rest of us! It sounds wonderfully delicious!!!

There is a recipe I posted under preserving in the Farm Bell Recipes. It is called Spectacular Frozen Corn. It was from an old radio station in the 1940’s. It is prety close to what you are looking for.
