I’ve seen this suggested as a sandwich condiment and I’ve found simple recipes with just butter, onions, and a crock pot and complex recipes including zucchini and a long list of spices. Wondering if anyone has made a sort of sweet, sort of sour, onion-only version of this. If not, I’ll be forced to experiment. . . Presumably it keeps well (months) in fridge.

The BBB, both the 2003 and the 2009 editions, have a recipe for “Red Onion Marmalade” on page 38. Haven’t tried it yet, but so far everything in those books that I HAVE tried were terrific!
Will most likely use regular white or yelow onions when trying it. This recipe has cranberries in it, so it should be plenty red!
