This is an amazing recipe full of wonderful textures. There is just something about the bacon, red onion, and celery that takes it to a whole new level. Try it! Even people who do not like potato salad like this!

Prep Time: 30 minutes Cook Time: 25 minutesIngredients
6-8 potatoes
6-8 strips of bacon, cooked and crumbled
2 ribs of celery, chopped
1 small red onion, diced
2 teaspoons dry mustard (important!)
Mayonnaise to bind all together
Salt and Pepper to taste
Directions
Cook potatoes until tender. Do not overcook! Prepare other ingredients while potatoes are cooking. After potatoes are done, peel and dice while still warm. Add other ingredients and stir together. Chill in refrigerator until ready to serve.
