This is my absolute favorite salad. It’s always a hit at picnics. You should make a double recipe, you’ll need it.
Difficulty: Easy
Servings: 4-6
Ingredients
Dressing:
1 tbsp vinegar
¼ cup sugar
½ cup miracle whip
Salad:
1 bunch broccoli, chopped into small pieces
½ lb. bacon
1 chopped onion
1 cup shredded cheddar cheese
Directions
Fry bacon and break into pieces. Mix salad ingredients together. Mix dressing separately. Add dressing to salad when ready to serve.
* You can use real bacon bits if you desire.

I have made a variant of this for a number of years –
3:1 broccoli:cauliflower
red onion for the color
sharp cheddar cheese (shredded)
a store bough zesty Italian dressing
sometimes some red bell pepper for color
I can’t take anything else to a church pot luck without severe threats!

I finally ran across this recipe just this past summer. I absolutely love it and can eat the whole thing by myself.
My additions are; sunflower seeds, raisins(or,dried cranberries), red onion sliced thinly, and a couple crumbled slices of bacon. My dressing is made with 1 cup of mayo and 3 tbsp red wine vinegar. The longer the salad sits the softer the broccoli becomes which is the way my hubby prefers it.
