A wonderful cobbler!

Cook Time: 45 minIngredients
3 cups raw rhubarb cut into 1/2 inch pieces
1/8 teaspoon salt
1/2 cup sugar
1 teaspoon cinnamon
1 tablespoon water
1 tablespoon all-purpose flour
Topping:
6 tablespoons all-purpose flour
6 tablespoons butter, softened
1/2 cup rolled oats
1/2 cup brown sugar
Directions
Heat oven to 350 degrees. In large bowl, mix first 6 ingredients together until rhubarb is coated. Place in greased 8 x 8 inch baking dish.
In small bowl, mix dry topping ingredients; cut in butter. Place topping over other ingredients. Bake 40-45 minutes.

I made this with some rhubarb that my neighbor brought over and it is so good! It’s very saucy and tangy while hot and would have been great over ice cream, but I think I liked it even better cold when the topping was almost like a cookie and the sourness of the rhubarb toned down a bit.
