Awesome salad for parties… best made ahead so it saves you time the day of. Can easily be customized, which makes it great for picky eaters. This recipe comes from my Mother (Lynda).

Prep Time: 20 minutes Cook Time: Set overnightIngredients
1 Head Lettuce, shredded
1 (10 oz.) package frozen peas
4 eggs, hard boiled and sliced
1 c. Diced Celery
4 Green Onions, chopped including the green stems
6 oz. grated Cheddar Cheese
2 tbsp. Sugar
1/2 c. Green Pepper (or red)
8 slices bacon, fried and crumbled (leave out for vegetarian friendly version)
2 1/4 c. Mayonnaise
Directions
Layer ingredients in the following order: Lettuce, Celery, Eggs, Peas, Green Pepper, Onion and Bacon. Mix sugar and mayonnaise, spread across the top like frosting, be sure to seal the edges. Top with cheese. Many ingredients are optional, and substitutions are easy to make, leave out the bacon for a vegetarian option. Cover and refrigerate overnight. Mix just before serving. Enjoy!

In the list of ingredients, the green onions were inadvertently omitted. My recipe calls for 4 chopped green onions, green stems as well as white ends. I always use more as I like the added flavor. Also, I put the crumbled bacon, along with the shredded cheese, on top of the mayonnaise spread.
I absolutely love this overnight salad. It always goes over well at a potluck or get-togethers.
