I have this recipe on a newspaper clipping from many years ago from who-knows-where!
Difficulty: Easy
Servings: I think a dozen
Ingredients
1 large egg
2 tablespoons vegetable oil
1 1/2 cups unsweetened applesauce
2 cups unbleached white flour (Maybeth’s note: I can’t eat these muffins anymore, but I just always used whatever all-purpose flour I had on hand)
3/4 teaspoon baking soda
2 teaspoons baking powder
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
3/4 cup raisins
Directions
Beat together egg, oil, and applesauce. Add flour, baking soda, baking powder and spices; beat well. Stir in raisins. Spoon batter into oiled and floured muffin wells. Bake at 375 degrees for 20 to 25 minutes or until firm to the touch and browned. Cool on wire racks.
Note from Maybeth: This recipe was advertised as ‘A sumptuous, sugarfree recipe’ … well, that’s true except for the naturally-occurring sugar in the raisins, and I think raisins are high sugar content. So don’t know if this would be good for a diabetic.
