Breaded chops with lots of Italian spices, broiled to a crispy finish. Can be served with pasta, escarole salad or with some good ol’ mashed potatoes and fresh veggies! : )

4 Pork Chops, 1 inch thick
2 eggs beaten well
1 cup dry bread crumbs
3 Tbsp. Olive Oil
1 Tbsp. Wine Vinegar
1 1/2 Tbsp. Lemon Juice
1/2 Cup Grated Parmesan Cheese
1 Tbsp. Dijon-Style Mustard
1 Garlic Clove (Minced or Pressed)
1/2 Tsp. Cayenne Pepper
1/4 Tsp. Crushed Red Pepper
1 Tsp. EACH of Dried Basil and Thyme (Leaves or Ground)
Directions
Cut excess fat from chops. Dip in egg and coat in bread crumbs (coat well).
Broil on a lightly greased rack, about 8 inches away from heat for about 10 min. Watch to make sure breading doesn’t burn. Put on lower rack if necessary.
In a bowl, combine oil, vinegar, lemon juice, cheese, mustard, garlic, peppers and herbs. Spread half the sauce over the chops. Continue broiling for 5 minutes longer.
Carefully turn chops over and repeat the procedure. Check for doneness. Breading should be very crisp and golden brown. : )
