These are delicious…like two chocolate cookies with a cream filling between them. They are well liked here in state of Maine.

Servings: 12-15 sandwich cookies - depending on size you make them
Cook Time: 20 minIngredients
Cookie:
1/2 cup shortening (solid)
1 teaspoon vanilla
1 & 1/2 cups sugar
2 eggs
1/2 cup sour milk
2 & 2/3 cup flour
1 teaspoon baking powder
1 teaspoon soda
1/2 teaspoon salt
1/2 cup cocoa
1/2 cup hot water
Whoopie Pie Cream Filling:
2 cups confectionery sugar
2 egg whites
3/4 cup solid shortening
dash salt
I double this filling as we like lots of filling between each cookie.
Directions
Preheat oven to 375. Lightly grease baking sheet.
Mix cocoa and hot water in small bowl. Set aside.
Cream shortening and sugar. Add eggs, vanilla, sour milk, and cocoa/water mixture.
Sift the rest of the dry ingredients and stir into the wet mixture.
Drop batter by the 1/4 cupful onto prepared baking sheets. With the back of a spoon spread batter into 4-inch circles, leaving approximately 2 inches between each cake. You can make these as big or small as you’d like.
Bake for about 20 minutes.
For cream filling:
Combine all ingredients and stir well to mix.
Beat with mixer until fluffy and spread between two Whoopie Pie Cookies.
