Easy side dish or good main dish for vegetarian.

Servings: 8 (4 if in my house!!)
Cook Time: 25 minIngredients
1/2 sm onion diced
1 box frozen chopped spinach
5 small carrots peeled and diced
1 tsp margarine
2 tsp caraway seeds
dash salt and pepper
8 oz box quick cook lasagna noodles
2 cups shredded mozzarella (or any cheese really)
1/2 cup Parmesan cheese
1 jar Alfredo sauce (Classico’s roasted red pepper)
Directions
Thaw spinach.
Preheat oven to 350.
Saute onion in margarine. Add carrots and saute some more. Add in spinach, caraway seeds, salt, pepper, and just enough water to cover. Cook on medium heat until carrots are soft. Place paper towel in a colander and drain vegetable mixture in it.
Spread 1/3 vegetable mixture in 9 x 13 pan. Sprinkle with 1/2 mozzarella and cover with layer of lasagna noodles. Repeat, this time using Parmesan instead of mozzarella. Then finish with layers of remaining ingredients, ending with mozzarella on top.
Bake covered with foil for 25 min.
