I have an abundance of pancake mix, and was wondering if any one had any recipes to use it in quick breads or cakes or cookies. Seems there should be a way to make other stuff with it since it is basically flour eggs milk and leavening already in it. Like what is the difference between it and Bisquick?

I use it to top fruit, like making a cobbler, add some cinnamon to it . Works great for me, I do leave it more on the dry side then wet.

I think I’d try adding some seasonings to it and making it like “shake n bake” for chicken or pork to bake in oven.
Also I’d be dividing it up in individual portions and freezing it and just taking out what you need.
Could also share some with a church for meals, soup kitchen etc.

Make onion ring batter with it. And a great one my former/late MIL would do – hot banana peppers! Clean, top, split in half lengthwise and deseed. Make the pancake batter (add no sugar) and dip and fry the peppers. Really good! The frying mellows the heat.
