Creamy, smooth, sweet potato goodness with a little nutty crunch in each bite. This is an absolute must have for our Thanksgiving family feast…as we savor the yummy souffle we wonder “why do we wait for the holidays to make this?” It is sooooo gooood! If you like sweet potatoes you’re going to really love this recipe.

1 pound cooked sweet potatoes
1 cup sugar
1/2 cup brown sugar, firmly packed
3 eggs
1/2 cup butter

3 cups corn flakes
1 cup chopped pecans(or any nuts)
1/2 cup butter
Directions
Mix the potatoes, sugar, brown sugar, eggs & 1 stick of butter with an electric mixer. Pour into a casserole dish & heat in a 350 degree oven until thoroughly heated. Combine the other stick of butter with corn flakes & nuts, pour over potato mixture and return to the oven for a few minutes until bubbly.
