This is a quick, easy, kid friendly, and budget friendly meal. It can also be easily altered to fit your tastes and what you have in your pantry. *Gluten free and vegetarian if you modify it slightly. Imagine all you could do with this recipe. It’s so versatile. It could easily become vegetarian by subbing black beans for the meat, or it could be dairy free by leaving out the cheese. It’s gluten free if you use something other than a flour tortilla to eat it in. Can you see why I call it Accidental Genius? Sometimes good things happen when you pull the wrong meat out of the freezer.

Prep Time: 45 minutes (most of that is just waiting for the rice to cook) Cook Time: 10 minutesIngredients
Mixture:
Two cups uncooked brown rice
Four cups water
One pound ground sausage (you could use beef or turkey)
One to two cups salsa
One cup shredded cheese
Other Stuff:
Tortillas (we used flour but you could use corn or taco shells if you wanted)
Sour Cream
Guacamole
Tomatoes
Shredded cheese
Directions
Boil four cups of water and then add two cups of brown rice and turn the stove down to simmer for 45 minutes or until rice is adequately cooked.
While the rice is simmering, brown and then drain the sausage.
Once the rice is done, pour off any excess water and add the sausage, salsa and cheese. Heat until the cheese melts.
That’s it. All you have to do now is fix your tortilla the way you like it and scoop some of the mixture in. It couldn’t be easier (unless you could get someone else to do it for you!)
