I mentioned to my husband that I needed to get some onions as I used up the last one. Then he was with me when I got a whole bag of small onions for $1, I even commented that I might have to think of a creative use for them because I had so many. The next day he tells me that he got onions so we don’t need any. He bought a 10 pound bag of big, beautiful brown onions – about a dozen of them! So…does anyone have any great ideas for using up onions? I already plan to quarter one, put olive oil and salt on it and cook it when we BBQ tonight – but I am going to need more ideas!

If you have a dehydrator, you could dehydrate them so you have dried, minced onion…..BUT DO IT OUTSIDE OR SOMETHING! (Strong, strong smell inside, don’t ask me how I know!)

You could caramelize a bunch of them – the ratio is about 2 tablespoons butter to a pound of thickly sliced onions. Put it all in a crockpot and set it to low. Check after a few hours, then let it go for for another 8-10, more or less. The resulting caramelized onions can be refrigerated, frozen or canned for future use.
Hmmm. This isn’t so much a recipe as a method, but will try to get it into a form which can be posted with the recipes.

Onions store well – in hot humid WV summers sometimes I wrap them in newspaper and keep them in the frig. How about French Onion Soup? Oh or Paula Deen’s Saturday Night Onions? I will post that in the recipes. I do dehydrate onions – great to have! And yep I do them outside – dehydrator on the table on the back covered porch. Hmmm – Cheese Stuffed Onions? I posted that recipe over in the Community Cookbook – I need to copy it over here. It’s GOOD!
Also – had a good friend on Canning2 who bought 50 lbs. onions once a year. She did a marathon dice and freeze session – I believe she froze them in 1 cup baggies. Lasted her the whole year.

I was going to suggest what Dede said….freeze them….I dice onions, green peppers and celery for freezing to use in goulash, or soups, meat loaf or whatever you might want to use those chopped ingredients in. Or do onions alone. Put in small baggies and freeze.

Great ideas folks! I will try out the recipes and I am going to dice and freeze – maybe even dry the first batch of onions – they are starting to go – and there is NO room in the fridge for them. LOL
