Over the years, several people have emailed me asking about salt-rising bread. I love baking bread, but I have no experience with this. Anyone have a great recipe that works?

Salt Rising Bread
STARTER
3 medium potatoes
1 teasp. sugar
4 cups boiling water
3 TBSP. corn meal
1 teasp. salt
DOUGH
2 cups lukewarm milk
1/8 teasp. soda
1 cup water
2 TBSP. melted shortening
1/8 teasp. salt
Flour
Pare and slice potatoes. Add corn meal,sugar,1 teasp. salt and boiling water. Wrap bowl in a heavy cloth. Cover and allow to stand in a warm place overnight. In the morning, remove potatoes. Add milk, soda, salt, and shortening. Add sufficient flour to make a dough just stiff enough to knead. Knead until smooth and elastic. Form into loaves. Place in well-oiled pans. Cover and let rise until double in bulk. Bake in moderate oven (400 degrees)about 45 minutes. Makes 3 loaves.

My Dad loved salt rising bread and as a child I grew to love it, too – I probably still would if I could find it!
I can remember it was harder to “keep” than regular yeast bread – we bought it in the dairy case and stored it in the refrigerator. As it got more difficult to find in stores, we often found it in the freezer case.
