Has anyone made scones from Suzanne’s Quick Mix? I made them this morning using (gasp) Bisquick, but was wondering how much shortening to put in them if I wanted to make the quick mix and use it.

I’ve used the Quick Mix to replace Bisquick in any recipe calling for it…I don’t see why it wouldn’t work to just replace Quick Mix for the Bisquick in the recipe you used this morning. Maybe??

Thanks, CindyP, but I think Bisq. already has shortening in it, as the recipe doesn’t call for any. Nor does the Bisq. biscuit recipe.

Hmmm….I’ve added shortening or butter to regular Bisquick recipes, so I didn’t realize that.
I looked around and other “quick mix” recipes use 1/2 cup shortening per 5 or 6 cups of flour, but them store in the fridge. That’s not a lot of shortening per 1 cup recipe (like the biscuits use 1/4 cup per 1 cup of Quick Mix alone).
Bisquick calls for 3 Tbsp butter per 2 cups of Bisquick, which isn’t quite 1/4 cup. So I looked at the scone recipes here on FBR. They’re basically calling for 1/4 cup shortening per 1 cup of flour, sugar, etc.
So me being me, I’d use 1/4 cup shortening/butter per 1 cup of Quick Mix like the biscuits call for 🙂

Would have to agree with you, Cindy! A scone is basically a sweet biscuit, maybe cut in a different shape, so using the same proportion of fat/butter and adding sugar should pretty much do the trick.
(Been meaning to try just that, but alas have not yet done it.)

I did make up the mix, am trying biscuits with it today.
We love scones here, I usually put dried cranberries and choc. chips in them.

Well. Finally got around to making scones using the Quick Mix! We are very happy with the results.
To 2 cups of Quick Mix, add 1/4 cup sugar. Then just make the biscuit recipe. I just made a flattened round with the dough and cut into 8 wedges. Baked for about 14-15 minutes. Watch closely – our oven is goofy, so no telling how long they should bake in a normal oven.
Will try adding dried fruit next batch. Probably add that after cutting in mthe butter but before adding the milk. Wanted to first see about how much sugar to add to the Quick Mix!
We like it this way, but with clotted cream would have been better. 😉
