Here’s something savory to do with all the zucchini you might have in the summer… there are many versions of this recipe, but the Old Bay is the key to the ‘seafood’ flavor.

Servings: unlimited!
Ingredients
2 c. grated zucchini
2 eggs
1 c. seasoned bread crumbs
1 Tbsp. mayonnaise or salad dressing
1 Tbsp. Old Bay seasoning
2 Tbsp. grated onions
Directions
Grate 2 cups unpeeled zucchini. Drain for 2 hours or long enough for water to drain from vegetable. Add 2 beaten eggs, bread crumbs, onion, seasoning and mayonnaise. Drop by tablespoon into hot oil until browned.
