Yummy pickled beets. Quick, easy, and ready to eat the same day.

3 medium beet roots
1 big lemon
5 garlic clove, 1 of them smashed
1 tablespoon salt
1/2 cup vinegar
water
Directions
Place the beet roots in a pressure cooker and boil them half an hour until soft. When soft, peel the beet roots. Chop them how you wish, but they shouldn’t be too small. Put them in a big jar or in a pot. Add garlic, salt, vinegar, and lemon juice to water in the pressure cooker. Then pour this water into the jar. The level of the water should be over the beet roots. Add some hot water if needed to cover beets. Put the lid on.
That’s it! Keep refrigerated.
