These are so good, just like a mini pecan pie!
Difficulty: Easy
Servings: 24 minutes
Ingredients
1 cup brown sugar
1/2 cup all-purpose flour
1 cup pecans, chopped (I sometimes use 1 and 1/2 cups)
2/3 cup butter, melted (not margarine)
2 eggs, beaten
Directions
Preheat oven to 350 degrees. Combine brown sugar, flour, and pecans, set aside.
Combine melted butter and eggs, mix well. Stir into flour mixture. Fill miniature muffin cups 2/3 full. (I don’t use muffin liners but you can if you like. If you don’t use liners make sure to spray pan with Pam or some other kind of vegetable spray.)
Bake for 20 to 25 minutes or until tooth pick comes out clean.
Remove immediately from pan to wire racks to cool.

Wow! These are delicious!! Of course, I made them into almost full sized muffins because I just didn’t want to deal with the mini muffin pans. And I was worried about there being no leavening – but the eggs were just right!
Next time I will try doing the minis. This recipe made 11 smallish regular sized muffins.
Might have to go try just one more. They are sorta small…
