My son loves meatloaf and I have never made it. He always has to get it somewhere else. He’s twelve now and I feel the need to keep winning his heart. Help me out with a good (also easy) recipe, please.

Here is my old stand by for Meat Loaf
1 pound of hamburger
1 pkg of Lipton Onions Soup Mix
1/2 cup of Ketchup
2 eggs
1 sleeve of soda crackers crushed
1/4 to 1/2 cup of milk
I mix it up in my kitchen aid mixer, form in to pan and top with 1/2 cup ketchup mixed with 2 tablespoons of brown sugar, bake at 350 for about 45 minutes. Very Easy!

I was reading an old Amish cookbook the other night and came across a recipe for Meat Loaf Tater Tot Casserole. It looks pretty easy and I would think that kids would love it because it has tater tots on top. I will submit it as a recipe if you want to check it out.
My personal favorite is a Meatloaf Italiano that was on the back of a bag of Pepperidge Farm Stuffing mix. It has lots of Italian herbs in it.
The only suggestion further than that, is if you do make a meatloaf, tip it up and strain off the fat that will accumulate around the meatloaf. It will run to the corner of the pan and I use a turkey baster to remove it.

Instead of the mushroom soup, you might try to use tomato soup, if he doesn’t like mushroom soup. I’m not sure if kids like it. When I make my fave, Meatloaf Italiano, I pour a small can of tomato sauce on top of the meatloaf only during the last 15 minutes that is in the oven, and then sprinkle it with Italian Blend. If you used tomato soup when you assembled the recipe, per the instructions, it would probably be more like catsup under the Tater Tots. Let me know if you try it and if your son likes it.

In the meatloaf tater tot casserole, you might also consider using spaghetti sauce, or pizza sauce in place of the mushroom soup.
