I found this in an old Amish cookbook. There was a recent request for an easy meatloaf recipe for her son, and this seems pretty kid friendly to me. I’ve not made this, and I don’t know if a child would like mushroom soup. I think I would substitute an 8 oz. can of tomato sauce for the soup. I would guess that it would serve 6 or more. Of course we love leftovers warmed up for sandwiches, if there is any left over. I would guesstimate that the prep time would be 10 minutes or less, and baking time 45 minutes to an hour. We usually make meatloaf in a bread pan, so it might bake quicker in an 8″ square pan.

1/2 cup tomato juice
1 beaten egg
1/2 teaspoon salt
1 # hamburger
3/4 cup oatmeal
1/8 teaspoon onion salt
1/8 teaspoon pepper
1/2 can cream of mushroom soup
Tater Tots
Directions
Mix all together except soup and Tater Tots. Press into 8″ square baking dish. Top with soup and Tater Tots. Bake at 350* until meat is no longer pink.
