This a light brownie… I don’t use all of the icing on the brownies – too rich for me, but you can use the extra over ice cream. Yum! Adapted from “Amish Country Cooking vol. 1” by Das Dutchman Essenhaus

Prep Time: 15 minutes Cook Time: 25 minutesIngredients
Brownie Ingredients:
¾ cup Shortening or Butter
1 1/3 cup Sugar
3 Eggs
1 1/3 cup Flour
½ teaspoon Baking Powder
2 Tablespoons Cocoa
1/3 teaspoon Salt
1 ½ teaspoon Vanilla
½ pkg Miniature Marshmallows
Icing Ingredients:
¾ cup Brown Sugar
1/3 cup Water
3 Tablespoons Cocoa
4 Tablespoons Butter
1 ½ teaspoon Vanilla
2 cups Powdered Sugar
Directions
1. Mix all brownie ingredients except marshmallows together, creaming the butter, sugar and eggs first then adding the rest.
2. Bake at 350 degrees for 20 minutes. Test for doneness. If done, take out of oven and cover with miniature marshmallows. Put back in oven for 3 minutes. Take out and drizzle icing over.
Icing Directions:
1. While brownies are baking, boil the icing ingredients except for powdered sugar together for 3 minutes, stirring. Let cool. Stir in the powdered sugar. Keep warm.
