Make frozen patties ready for use anytime. So much better than the store bought type in the frozen food aisle. Could use pork or beef, I just really like the turkey. Can leave out the maple syrup if desired.
Difficulty: Easy
Servings: about 40 patties
Prep Time: 20 min plus freezing timeIngredients
5 lbs of ground turkey (1 5lb frozen Chub, thawed)
1 Tbsp + 1 tsp ground ginger
1 Tbsp salt (more or less to taste)
1 Tbsp + 2 tsp rubbed sage
1 tsp cayenne pepper (or pepper flakes)
2 tsp ground black pepper
2 – 3 Tbsp Maple Syrup (or 1/4 cup brown sugar and 1/2 tsp maple flavoring).
Directions
Have ready 2 baking sheets lined with parchment paper or wax paper. Place all spices, salt, herbs in bottom of a large mixing bowl. Mix. Then add ground turkey. With clean hands, mix together thoroughly. Wash hands. Add Maple syrup. Again mix together thoroughly. (can use large stand mixer with regular mixing paddle for these two steps my husband found). Scoop equal portions of sausage onto lined baking sheets, forming patties. “Flash freeze”. As soon as frozen, transfer patties to zip-lock Gallon size freezer bags, separating layers with parchment paper or wax paper. Now you will have about 3 bags of breakfast sausage ready for use as needed. Store in freezer. To cook: remove as many patties as desired. Cook from frozen in fry pan on medium heat until no longer pink in middle, flipping halfway through to cook on both sides.
