Perfect for a summer picnic! Easy to prepare, crushed sugar cubes give it an interesting texture.

Ingredients
1 1/2 sticks (12 TBSP) butter softened
1 cup superfine sugar
1 2/3 cups flour
1 tsp baking powder
4 large eggs
2 tsp finely grated lime zest
10-12 sugar cubes, roughly crushed
for topping:
finely grated zest of 2 limes
juice of 3 limes
1/2 cup sugar
Directions
1. Preheat oven to 350. Lightly grease and line 11×7 inch cake pan.
2. For the cake, put all ingredients except sugar cubes in a large bowl & beat until smooth and light. Put in prepared pan and smooth surface. sprinkle crushed sugar cubes over top.
3. Bake for 40 minutes until top springs back when lightly pressed.
4. Mix topping ingredients and pour evenly over warm cake. Leave cake to cool completely in the pan, then turn out and cut into squares.
