This is a very moist ham loaf. It’s a great way to use up leftovers and has a wonderful flavor. I usually serve with parsley potatoes, peas and carrots.

Ingredients
Ham Loaf:
1 1/2 lb. ground ham
1/2 lb. ground pork
1/3 cup sliced green onions
2 eggs
1/2 cup milk
1/2 to 3/4 cup finely crushed saltines
pepper to taste
Topping:
3/4 cup brown sugar (I don’t use quite so much)
1 tsp vinegar
8 oz. can crushed pineapple
Directions
Preheat oven to 350.
Mix ham loaf ingredients together well. Place in sprayed loaf pan or free form a loaf in a baking dish.
In small saucepan, mix topping ingredients and heat til sugar melts. Keep warm.
Bake loaf 15 min. Start basting loaf with topping. Bake 1 hr. Let rest 10-15 min.
**my notes** I don’t buy pineapple in 8 oz cans so I use approx 8 oz. out of the can then use remainder for something else. Have used just pineapple juice also tidbits cut smaller–lay them on top of loaf and basted with sugar, juice from can and vinegar.
