This is something quick, easy, filling and budget-friendly that’s one of the comfort foods I have made for years. When things are lean, so is the amount of meat in the sauce 🙂

Ingredients
1 lb. lean ground beef
1 medium onion, diced
2 cloves of garlic, minced OR ¼ tsp. garlic powder
1 can tomato sauce
1 can diced or stewed tomatoes, undrained**
Basil
Oregano
Macaroni – about 1 pound
**I use a pint of my home-canned!
Directions
Saute ground beef in a large pan until no longer pink, breaking it up into small chunks.
Drain off any fat.
Add diced onions and garlic to the beef in the pan and continue to cook over low heat until the onions are getting soft.
Add the tomato sauce and the canned tomatoes, undrained.
Add a small pinch of oregano and a couple of pinches of basil.
Stir well, bring to a boil, then reduce heat and simmer sauce about 15 minutes or more.
While the sauce is simmering, cook macaroni as package directs but undercook by a couple of minutes (cook ‘al dente’).
Drain and rinse macaroni in hot water – drain well.
Add macaroni to the sauce in the pan and heat until both sauce and macaroni are hot.
Add more garlic and seasonings to your taste.
Really good served with cooked frozen corn, buttered and fresh Italian bread and butter.

Yummy—-this is just about spot on the same recipe I use. I do, however, add extra water and cook my macaroni right in the meat/tomato mixture. Put the dry noodles in, bring back to a boil, then simmer, covered for about 20 minutes, stirring several times to keep the meat or noodles from sticking to the bottom of the pan. Glad you posted this Dede.
