Hi one and all. I am looking for ways to use the eggplant I grew this year. We have had all the common dishes you find all over the internet. But what I am really looking for is a way to preserve to use this winter. Any thoughts? Can it be pressure canned or BWB in a recipe? I am really stumped and don’t want to waste it.

Hi one thing I have done this year is hollow out small eggplants and strung them up to dry. I did 20 kilos and that equals just over 200. With the part I took out I cut up into small pieces and am drying that on a cloth in the sun. With the hollowed out eggplants you stuff them after letting them sit in water overnight and then cook. Very nice, very easy but time consuming you can do the same with bell peppers(capsicums) and any hot or sweet large chillies.

I ended up steam blanching the sliced and peeled eggplant for 3 minutes and then dehydrating them in the Excalibur I have.
I never knew nor, thought they could be dried until someone on one of the Yahoo groups I belong to told me it could be done.

Hi ? used to have one of those driers and they are great. You dont have to boil them before drying. ?t isnt necessary. You can also dry or grill slices of it and put in olive oil with garlic.

So, last night was the dinner. The eggplant rollups were a definite hit! Even though there was quite a bit of garlic, they were good. I tried both mayo and sour cream and used cilantro. Two small eggplants made about 10 rolls.
The stuffed eggplants were good, too if you like a stuffed pepper, tomato kind of dish. The eggplants actually had a little bit of a sweet taste.

I didn’t boil the eggplant, I only steamed them for a couple of minutes. I was told it helps with removing the bitterness.
