This has been a family favorite for 50+ years. It was a favorite of my father and now my five-year-old grandson can’t get enough of it. It makes a great base for strawberries and ice cream!

Servings: 16-20
Prep Time: 15 minutes Cook Time: 45 minutes plus cooling timeIngredients
Cake:
1 yellow cake mix
1 small box lemon gelatin (Jello)
2 eggs
3/4 cup vegetable oil
3/4 cup water
1 tsp vanilla
1 tsp lemon extract
Glaze:
1 cup powdered sugar, sifted
2 TBS lemon juice
Directions
Combine all cake ingredients on low speed. Beat for four minutes on medium speed scraping bowl often. Pour batter into greased & floured (or spray with baker’s spray) bundt or tube pan. Bake 45 minutes at 350 until a toothpick comes out clean. Cool in pan 15 minutes. Turn out on wire rack set on waxed paper. Combine glaze ingredients until smooth. Pour over warm cake. Allow to cool completely. Store tightly covered.
Can be baked in two loaf/bread pans. Reduce baking time.

Sniff, inhale deeply. Smell the wonderful, lemony goodness. That’s Vic’s Easy Lemon Pound Cake. My daughter was wanting something lemony and when I saw this recipe I thought it would fit the bill. It is delicious. I doubt there will be any left to try with the strawberries my daughter is picking after work. Thanks Vic.

I’m glad you enjoyed it. A variation that is equally good is to use orange gelatin and orange juice for the glaze.

We did enjoy the pound cake. In fact, we only have about 1/2 of it left and there were only 4 of us home last evening. It was DH’s dinner! I did manage a bit with some strawberries. Delicious!

I had a bake sale for work and was looking for an old standard, not anything flashy. This fit the bill and was very popular. Way too sweet for me, but it was a big hit at the sale. It was also very easy to make. I mixed up a double batch in my kitchen aid mixer (it all barely fit) and baked it in three loaf pans.
