My homemade stuffed pepper soup recipe.
Difficulty: Easy
Servings: 10
Prep Time: 20 minutes Cook Time: 4-8 hoursIngredients
1 x-tra large slow cooker
3 lbs ground turkey
3 sm chopped onions
28 oz can diced tomatoes (I use the one with garlic & oregano)
15 oz can tomato sauce
14 oz ketchup
4 chopped small green peppers
1 tsp pepper
5 cups water
2 cups of regular beef or chicken broth
1 cup uncooked brown or white rice
Directions
*Brown ground meat and onion in large skillet till cooked through; drain.
*While cooking meat place onions, tomatoes, tomato sauce, ketchup, pepper, water, and broth in slow cooker. When the meat is done put in slow cooker also.
*Cook on Low for 8 hours or on high for about 4 hours
*Add green peppers and cook for about 15 minutes. Add rice and cook as directed on the package.
*When it sits it will thicken up so add 1/2 cup of rice if you want a really thick soup.
