My Aunt brought this to a family reunion a long time ago and shared the recipe with me. I LOVE Vidalia onions but any large sweet juicy onions will work in this. Excellent side dish and a great change of pace.

Servings: 8 to 10
Cook Time: 50 minutesIngredients
2 1/2 pounds Vidalia onions, peeled and thickly sliced into rings
1 stick of butter, melted
1 12 ounce jar of Heinz chili sauce
1/2 cup brown sugar
salt, pepper, chili powder to taste (optional)
2 cups instant rice
Grated Parmesan cheese
Directions
Mix sugar, butter and chili sauce. Add salt, pepper, and chili powder to taste (optional). Toss mixture gently with the sliced onions until well coated. Pour all into a large casserole dish. Cover and bake at 350 degrees for 35 minutes, then stir in the rice. Bake 10 more minutes, covered, then stir well. Sprinkle a generous amount of grated Parmesan over the top. Return to oven and bake uncovered for 3 to 5 minutes to brown the cheese.
